Slow Cooker Thin Cut Pork Chops

Pork chops have never been my favorite type of protein. They have the tendency to be tough, dry, and quite frankly… tasteless. That all changed when I was introduced to this amazing Crock Pot Pork Chops recipe.

The pork chops are flavorful, smothered in delicious gravy, and best of all, they melt in your mouth. My sons ask me to make this crock pot recipe just as often as they ask me to make Crock Pot Pulled Pork (a summertime favorite)!

I would venture to say thatvery few people in the world choose pork chops when asked what their favorite meal is. If I were planning my very last meal on Earth I'd imagine a cheesy pizza. Maybe a juicy grilled burger. Or YUM, some spicy Pad Thai – pork chops would never even cross my mind.

I am a pork chop convert though… they get such a bad rap and I'm here to set the record straight. When cooked incorrectly they're pretty bad. BUT, when cooked in a crock pot (or Instant Pot) pork chops are NEXT LEVEL GOOD.

These pork chops are moist, tender, and practically drowning in a delicious gravy. They've actually turned into rainy day comfort food in our house (and I might just consider making them my last meal on Earth…).

Just a few days ago my youngest son wasn't feeling so hot – his seasonal allergies were starting to kick in and drive him nuts. You know, the runny nose, head stuffed up like a balloon, miserable feeling? The worst.

He always feels better when he gets to pick out what we eat as a family, so of course, I let him choose. Almost instantly he said "Crock Pot Pork Chops!" My whole family loves these easy slow cooker pork chops not only for their delicious taste but because I serve them with his favorite side dish – mashed potatoes!

Crock pot pork chops ingredients

  • Boneless pork chops – bone in chops would work too, just make sure they are cooked through
  • Fat-free plain Greek yogurt – sour cream will work too if you're in a pinch
  • Worcestershire sauce
  • Dry onion soup mix
  • Chicken broth – I like low-sodium broth for this recipe so I can season with salt and pepper later
  • 1% milk
  • All-purpose flour

If you've got a can of cream of chicken soup laying around, go ahead and use that in the sauce for your crock pot pork chops. I actually love making my own cream of chicken soup though – it's unbelievably easy (andsuper quick) and it tastes amazing.

How to cook pork chops in a Crock Pot

So many crock pot recipes need to cook ALL DAY LONG. For this pork chop crock pot recipe, I find that prepping my ingredients and starting the crock pot around lunchtime works best. That way when my kids get home from school, the kitchen smells amazing and they know dinner will be ready soon!

  1. Place pork chops on the bottom of the crock pot.
  2. Next, make your homemade cream of chicken soup. (It's SO easy!!!) In a medium saucepan, mix the chicken broth, milk, and flour over low/medium heat until it boils, stirring constantly. Continue stirring the soup until it thickens, then remove from heat.
  3. Now, in a medium bowl, mix together your freshly made chicken soup, Greek yogurt, Worcestershire sauce, onion soup mix, and chicken broth.
  4. Pour your sauce mixture over the pork chops – you'll want to cover the pork chops, but don't worry too much about mixing it all around. The gravy will melt into the pork surrounding it in yummy goodness. That's the wonder of a crock pot – it does all the work for you!
  5. Cook on LOW for 4-6 hours (mine were thin boneless pork chops and were done in 3 hours, so check them periodically)
  6. Remove the pork chops from the crock pot and plate them. (I suggest serving them on a bed of fluffy mashed potatoes).
  7. Last, pour gravy from the crock pot over the pork chops. Be generous with your gravy pouring, that stuff is liquid gold!

How long to cook pork chops in a Crock Pot

The beauty of a crock pot is that it gives you the ability to cook your meals "low and slow" without having to constantly be tending to them. As we talked about earlier, pork chops have the tendency to come out dry and tough. That is most often because they aren't cooked correctly.

While many Crock Pot recipes have your meats cooking for 6-8 hours onLOW, pork chops are typically thinner and cook faster than that. I've found that for a medium thickness chop, you'll need about 4-5 hours. For a thick-cut pork chops you'll want to allow 5-6 hours.

Recently, my butcher shoponly had thinner pork chops available. These thin pork chops were fork tender in only 3 hours!

One of the reasons a crock pot works so well is because the heat and steam is kept inside which helps to keep the meat moist. So, you don't want toconstantly be opening up your lid to check on your pork chops. They'll dry out. Instead, just notice the thickness of your pork chops before you cook them and then base your cooking time off of that!

  • Remove the pork chops from the crock pot and plate. Pour gravy from the crock pot over the pork chops.
